If you’ve seen it, then you know; some of the most captivating visuals in our current drinks issue come from the Bedford Avenue “oyster house and cocktail den” Maison Premiere.
We could name several favorite drinks from Maison Premiere (especially the absinthe), but are particularly taken with their “Maltese Falcon.” To get a shot of the action along with the recipe, we reached out to their bartender, Will Elliott.

Here’s what it takes to make this pretty-in-pink drink:
Maltese Falcon — Maison Premiere
Makes 1 cocktail
1½ ounces scotch
½ ounce fresh lemon
¾ ounce red wine blackberry shrub
1 egg white
5-6 large ice cubes
Add scotch, lemon, red wine blackberry shrub and the egg white to a cocktail shaker. Shake vigorously for 25 seconds, add ice and shake again for 45 seconds to 1 minute. Pouring through a strainer, transfer the mixture to a coupe glass.
