It’s hard to imagine that a chef from Portland might make some of the best Thai food around, but Andy Ricker’s Pok Pok NY might have us sold. After heading to New York a year and a half ago, the chef now has not only his original Brooklyn spot but an outpost on Manhattan’s Lower East Side, as well as the brand new companion bar Whiskey Soda Lounge.
But now you can make some of the magic at home. In honor of this week’s Bid Against Hunger event organized by City Harvest, Ricker showed us the steps to the dish he made: Khanom Jiin Naam Phrik. The recipe is from central Thailand, and Ricker believes it’s a style hard to find in the U.S. The dish consists of rice vermicelli topped with a curry of coconut cream, prawns and toasted mung beans along with a spicy chile-garlic oil.
