The Doe Fund Chef-in-Training Five Course Tasting Event

March 22, 2017 @ 7:00 pm

According to the organizers:

Aspiring chefs from The Doe Fund’s Chef-in-Training course will present a five-course tasting menu to an intimate group of guests on March 22. The event marks the culmination of the 8-week course for formerly incarcerated and homeless men participating in The Doe Fund’s Ready, Willing & Able transitional work program.

Given the acute need across New York City’s culinary industry, The Doe Fund has expanded its popular foundational Culinary Training Program to include an intensive course designed to prepare trainees for careers in the restaurant industry.

Chef-in-Training is taught by Chef Justin Fertitta, a CIA graduate and professional chef with over ten years’ experience in New York City restaurant kitchens. The course covers an array of essential skills, including knife handling, cooking locally and in-season, and interpersonal skills necessary for restaurant work.

Trainees first learn how to prepare and execute orders for the “lunch rush,” then move on to prepping and creating meals for the “dinner rush.” By familiarizing themselves with the demands of a restaurant setting and the pressure of a steady stream of orders, trainees gain the experience they need to transition to working in a restaurant kitchen.

Tasting event menu:

Beet tartare with granny smith apple, cilantro, orange coriander vinaigrette

Kabocha squash soup with chorizo and basil pistou

Rosemary elk meatballs with romesco sauce and toasted almonds

Grilled hanger steak with pomegranate gastrique and roasted oyster mushrooms

Espresso chocolate cake and coconut caramel
