A Dinner with Chef Olia Hercules

Olia Hercules is here to cook us a feast! Join the award-winning author of Mamushka at Archestratus as we celebrate the release of her new cookbook Kaukasis. All profits from the event will be going to Razom, a Ukrainian charity in New York, who work to provide neurosurgery for patients and training to Ukrainian doctors.

Menu

A snack of rye toast with lardo and fermented tomato.

Then to start a saffron chicken broth with lamb-filled, herbaceous dyshbara dumplings.

Followed by a feast of slow-cooked beef and walnut sauce, fermented pickles, beetroot marinated in savory plum sauce, herbs and radicchio, and little flatbreads stuffed with garlic butter, cheese, and chard.

For dessert, a fruity pudding with buckwheat custard.

Kaukasis bridges all the food and flavors of the Caucasus, incorporating Georgia, Azerbaijan, Armenia, Iran, Russia and Turkey.
